Cooking Frustrations

I'm starting to get really frustrated with cookbooks. I'm trying to find some nice, tasty, healthy recipes. Unfortunately many of the "light" cookbooks out there have bland recipes or ingredients that are hard to come by in Ohio. Some of the recipes also have really high levels of sodium (a no, no for Randall). One of my other complaints is that the prep time on some of these dishes is over an hour! I mean really, I know I stay home but even I don't have over an hour to just prep a meal, let alone someone who has a job.

At least Lent is almost over, I've completely run out of meatless dinner ideas for the kids and myself. Corbin will eat fish, but Nora won't - Nora will eat veggie/tofu stir-fry, but Corbin won't. Neither will eat rice. Fortunately our saving grace has been miso soup with noodles. Nora will eat it with scallions and mushrooms and Corbin just likes the noodles. I've also been cheating by giving the kids meatless "chicken" nuggets. Nora hasn't noticed, but Corbin has figured it out and instead will ask for a peanut butter and jelly sandwich.
